Overnight Oats

Yes, I realize this is the LEAST appetizing photo on the earth, but it is amazeballs!

I am a little late on the overnight oats train but they are DELICIOUS!

Here is the recipe I started with:

Ingredients
  • 2/3 cup almond milk (or milk of your choice)
  • 1/2 cup organic rolled oats
  • 1/2 cup vanilla (or plain) Greek yogurt (I used non-fat)
  • 1 pinch of cinnamon
Instructions
  1. The night before you plan to eat your oats, mix together all of the ingredients listed above and seal in an airtight container.
  2. Refrigerate the mixture overnight (they will be ready in about 3 hours, but overnight is best).
  3. Wake up and enjoy the next day!
Then you can add whatever you want! I added sliced almonds, a dash of honey, and a sliced banana!

YUM!

Oh Baby - Week 8

Please excuse the crazy expression on my face
Ross caught me mid-sentence, of course.

This week baby is the size of a raspberry, which I ate a bunch of yesterday, so it is weird to compare the two...I feel like a cannibal.

Total Weight Gain:
Well I am up a couple pounds I think. I have the old school type scale and haven't been weighing in at the same time of day, so it is hard to tell...

Maternity clothes:
Just the normal clothes, and they're fitting about the same.

Stretch Marks:
Nope.

Best moments:
Nothing out of the ordinary this week, It is fun reading more and more about what's going on in this crazy body of mine though.

Movement:
Even though I can't feel it apparently his little arms and legs are moving like crazy, and the tail is finally gone! The taste buds are forming now too!

Food Cravings:
Nothing that I have recently had. I am all about carbs and snacks. And fruit has been good to me too!

Food Aversions:
same as last week, nothing that I have eaten recently...definitely not pork, which looks like the rotting face of a vampire, apparently it was so gross I couldn't even find a picture of it online...I will have to take my own still later.

What I miss:
Mostly I miss just not thinking about what I put on/in my body. It is hard to know what's ok and what's not. It is annoying to have to try to figure it out before I take a bite of anything or use a face wash...

Nausea/Vomiting:
I am still getting nausea in the morning for about an hour or two. It does seem to be getting better though. Which is scary since that is the only thing telling my I'm growing a baby in there.

Symptoms:
None really, which makes me scared that I will miscarry or already have and don't even know it! I can't wait to go to the Dr. to know either way!

Labor signs:
Of course not yet.

Gender:
No idea, but as you know we are secretly hoping for a boy.

Belly Button:
Innie!

Wedding Rings:
On!

Sleep:
Sleeping well, except when Ross comes to bed at 4am!!! I told him that this is the end of that!

Wisdom:
Start researching early, there is a lot to learn, so start right away!

Sunshines and Creeps

Sunshine to date night last night! First I got absolutely stunning roses delivered to work, then we went out to my favorite dinner spot! I even indulged (as always) and got the filet, the most amazing thing to eat on the planet.

Creep to this week dragging ON and ON! Sunshine to it finally being Friday!

Sunshine to winning tickets to the garden tour here this weekend. Maybe I'll get ideas for my own, it could use some help!

Creep to this heat, seriously. I can't take it anymore, unless I am sitting at the pool I just don't want it anymore! Neither can my pups, its killing us all. However it is nice that they get worn out really quickly so it makes for a pleasant evening with quiet dogs after.

Sunshine to next weekend :) I can't wait to see all my girlfriends and celebrate Jenni's wedding!

Creep to moving into a new house costing SO. Much. Money! It is constant that we need this or that, and it is starting to add up fast! It sure is fun having a home of our own though, with a fenced in yard, which is making like so nice!

Sunshines and Creeps

Sunshine to my parents coming today!!!

Creep to being super tired lately...Ross is coming to bed later and later, and if he keeps this up I will be kicking him out soon ;)

Sunshine to Sophie coming home TODAY!!!! AHHHH, I can't wait to snuggle my puppy baby! Not that she really snuggles, and I have vowed not to let her sleep with us anymore since we put on our new wedding bedding...but, time will tell...I do love a good Sophie snuggle. I also can't wait for her to play in her pool in our new fenced in back yard!

Creep to knowing that Miss Sophie will desperately need a bath and a good brushing. 4 months at the farm means she will be one dirty dog! She hates baths so this will be interesting!

Sunshine to my mom's commitment to helping me clean out our old house. I have definitely been putting it off and it is nice to know someone I trust not to judge me too harshly, is coming to help out!

Creep to this weather NEVER GETTING ANY COOLER. I am not one to complain about the summer typically but I am ready for temps in the 70s and low 80s NOT in the 90s everyday. ugh, unless it is a pool day I am just not interested!

Creep to Ross's vacation. I am getting sick of being stuck at work while he is off having a Ross-cation. Sadly, this is a sore spot for the two of us this week.

Sunshine to my baby bunnies we have living in our yard (probably not much longer but they aren't even the size of your palm, they're SO precious! I mean seriously you have no idea how flippin cute these guys are!

So What Wednesday

I am linking up with So What Wednesday for the first time...because that is how I feel these days...

So what if I have lost ALL motivation with moving. Our house is in complete disarray and our old house is still needing to be cleaned out and cleaned up.

So what if all I do after work is go home, make dinner and then totally veg out on the couch until bed time (which is creeping earlier and earlier)

So what if I have lost my ability to make decisions or to care about what other people think...This is so unlike me, but I'm sure I'll be back to normal soon. Typically, I am all about making ALL decisions, for everyone. Now I can't make any decisions, ever. I wandered around the grocery store yesterday searching for something to make for dinner...

So what if my weekly hair wash turned into a week and a half...Ok I know that one is actually disgusting. I swear if you saw me you would have no idea that my hair hadn't been washed though...small consolation I realize. With my ridiculously long hair it just takes a lot of time and effort to get up in the morning early enough to get it done and get to work on time, so it is easier to just leave it another day, and another and another.

So what if my new flooring is now COVERED in dog hair, it had to happen sooner or later. Cooper is finally home with us again and with that he brought his massive amounts of hair just waiting to fall off his body, which it has all over the floor.

So what if I CANNOT wait for my Sophie baby (dog) to come home this weekend! I COULD NOT BE MORE EXCITED! After four very long months she is FINALLY coming back where she belongs. However, I am a little anxious about this since our new neighbors have to small dogs who can get practically their whole bodies through the fence and are very aggressive toward Cooper (who seriously has 70 lbs. on them) and he cowers and runs away. This will not happen with Sophie, she is fairly aggressive with other aggressive dogs, so this could be an issue. Stay tuned...

So what if I downloaded 50 Shades of Grey last Friday and when I opened my Kindle at the lake on Saturday and it was open Ross's 12 yo nephew started reading it...AHHHHH luckily he didn't read anything naughty which is something to be said from what I hear about this book. I changed to a book about Elvis being reincarnated as a dog instead. I have also finished the Book Thief and am almost done with Defending Jacob as well.

Sunshines and Creeps

Sunshine to the short week. I liked having a day off Wednesday to celebrate Independence Day! It is like having two mini weeks. I could get used to that! However, that meant spending the day alone in bed while Ross was busy working, so nothing really exciting until the fireworks later that night.

Creep to having a major case of the sleepies this week. No matter how much I sleep.

Sunshine to Goldfish Parmesan crackers, they are the best!

Creep to my audiobook taking FOREVER! It is a really long one. 11 - 1 hour 10 minute parts. And for a book that took a long time to get in to it has been a stretch.

Sunshine to Defending Jacob being next up on my list! Also 11 hours but I have a feeling it won't be a struggle to turn on every day.

Creep to this weather. I know I complain about the winter, but I am not made for summer. This heat is for the birds, I am melting out there.

Sunshine to the weekend!

Rhubarb Sour Cream Pie

Folks, I don't even like rhubarb that much but this is heaven. I make this about once a summer and I NEVER regret it!

Ingredients:
1 pie crust (unbaked) *I always cheat and use a store bought Pillsbury.
4 C chopped Rhubarb
1 egg
1/3 C all-purpose flour
1 1/2 C white sugar
1 C sour cream
1/2 C all-purpose flour
1/2 C brown sugar
1/4 C butter, melted

Directions:

  1. Preheat the oven to 450 degrees F (220 degrees C).
  2. Press the pie crust into a 9 inch pie pan. Spread rhubarb in an even layer in the bottom of the crust. In a medium bowl, whisk together the egg, white sugar, sour cream and 1/3 cup of flour until smooth. Pour over the rhubarb.
  3. In a small bowl, mix together 1/2 cup of flour and brown sugar. Stir in melted butter until the mixture is crumbly. Sprinkle over the top of the pie.
  4. Bake for 15 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C). Continue to bake for 40 minutes, or until the edges have puffed, and the topping is golden. The center may still be slightly jiggly. Cool completely before slicing and serving.
