Mushroom and Mozzarella Pasta

Yesterday I stumbled across my new favorite blog! It is Finding Joy In My Kitchen and it is a blog all about food, and great recipes. There are millions of recipes, or it seems like it., and they all have step by step photos to go with these recipes. I spent a little time looking it over and picked out a recipe for dinner last night, and immediately armed Ross with a list to head to the grocery store!

I chose Mushroom and Mozzarella Pasta. It turned out just like her pictures showed and after another trip for Ross to the store, we had a delicious dinner.

Yummy! I can't wait for leftovers at dinner tonight :)
I'm also looking forward to trying more recipes of hers in the future!

Wishful Wednesday

Today is Wishful Wednesday at The Seattle Smith's

and today's wish is:

'I wish' .... I could play a character's role in a book and it would be Hermione Granger!

Not only is she the smartest gal in the whole Harry Potter Series but she also gets to go along on all of the awesome adventures that Harry and Ron go on. However, I do not want to end up married to Ron but to Harry instead. Maybe JK Rowling could make that one little change for me when I turn into Hermione. I have one more request, can I please be the older, more put together Hermione, not the young, know it all, kind of a mess, Hermione, thank you. This Hermione

Not this one

This was actually a tough one, I love books, and reading so I had a hard time choosing one. I would love to be many characters, including Harry Potter himself, Jay Gatsby (of The Great Gatsby, my favorite book), Atticus Finch (who would be my other choice if I were to take the time to do this blog again - he is who I aspire to be as a person and as a lawyer, plus he had a daughter named Scout, which I wish I had the guts to do), Sherlock Holmes, Robert Langdon (Dan Brown Novels - he's smart and adventurous, awesome), I could go on and on.

Happy Wednesday!

Mello Yello I will miss you most of all

This year for lent Ross and I gave up pop, pizza and fast food (apparently he is trying to fight me on the last one).
Mello Yello is my weakness. It is day one of no mellow yellow and I am definitely going through withdrawals, and my mouth is currently watering just thinking of the citrus deliciousness.
This is my tribute to you Mello Yello, I will miss you dearly! See you April 3rd!
Hopefully in the next 40 days I don't find a new vice to replace it!

Valentine's Day

I love love love Valentine's Day.

It's hard to believe sometimes, but I can be a bit of a sap. It's probably from watching too many Disney movies when I was little. I am a sucker for flowers and mushy stuff when it comes to Ross. Last night I got an early Valentine's Day gift. When I came home I was greeted by these!

How lucky am I?! Valentine's Day is the best kind of holiday, its sole purpose is to celebrate love and happiness!

Ten Things I love about Ross:
  1. He is patient (with me that is a must)
  2. He is generous to a fault, and I too often find myself taking advantage of it (like making him take out the garbage and shoveling far too much)
  3. He is forgiving, unfortunately I have tested that one a little more than I would like as well
  4. He is the most handsome and good looking man I know, and he is all mine
  5. He loves me
  6. He doesn't like to make decisions (which is great for a bossy person like me who likes to make all the decisions)
  7. He is a sap too
  8. He goes to chick flicks with me (and actually doesn't complain about it)
  9. He likes my cooking, or pretends to
  10. He doesn't get upset about me never cleaning, and cleans up most of my messes for me

Love you Ross

Happy Valentine's Day Everyone! I hope you all have someone special to share the day with, be it family or friend, love is love!

Fighting Sioux

The Fighting Sioux Hockey team is the greatest thing in Grand Forks (except for Ross, of course). Hands down. The Sioux bring this town together like none other. On game days you are hard pressed to find someone who isn't wearing Sioux gear and who hasn't talked about the game at least once that day.

A couple weeks ago Kris and her boyfriend Josh came up for a game with Jenny and Quinn. They had rockin' tickets. Ross and I scrounged up a couple tickets too. Which is the great thing about people here, someone is always looking to get rid of a few, and are usually generous enough not to charge you for them.

All the boys had one too many drinks, but Ross could barely keep his eyes open by the end of the game. This was actually a pretty big game and the Sioux were winning almost the whole game until...
They scored, and tied it up, while we were trying to take a picture, which ended up like that. Nice one Ross.
I made him try again.

AJ

Meet my friend AJ.

AJ is the single creepiest thing on the face of the planet. Fact. I met my friend AJ at our office Christmas party. I won him in our white elephant exchange. He came in a box which told me that his name is AJ, he plays the trumpet because he wants to be like his parents who are musicians, mom is a pianist and dad is a sax player. Now AJ is a undercover kid, and undercover kids like to play dress up and play with their friends. They hide secret gifts (this is all on the box remember, I'm not making it up!) under their clothes and sneak into their friends' rooms to leave them their gifts.

I tried to let AJ live in peace at Santa's Village with people like him but somehow AJ followed me home and I found him at work on Monday. So I guess I will just have to take of AJ for the next year and send him to his next lucky friend at next year's christmas party :)

Mi Mexico

Grand Forks just got a new restaurant!! Which is a pretty big deal. The parking lot is full from the moment it opens to the time it closes, every single day!

Ross and I went a couple weeks ago and I wasn't too impressed. I was giving them the benefit of the doubt though because it was pretty late at night and they had just opened that week. So...Jess and I went for lunch today. I had the exact same thing (to do a fair analysis) and it was delicious!

Last time the chips were oily and not crisp, this time the opposite was true. It was yummy! What is the best thing at Mi Mexico you may ask?
The Guacamole, that's what!!!!

If you're ever in GF and craving Mexican food, check it out! It's right by the old Leevers in the old Hardees (obviously nothing can stay open in GF) on the corner of Washington and DeMers.
