Guiltless Chicken Alfredo

This was delicious. And easy.

I would seriously recommend you make it lickity split. It was even a hit with Ross. Most recipes get an "eh it's ok" but this one got lots of compliments and he said it was a keeper!

Guiltless Chicken Alfredo Recipe:
Ingredients:
2 cups low-fat milk
1/3 cup (3 oz) low fat cream cheese
2-3 tablespoons flour
1 teaspoon salt
1 tablespoon butter
3 cloves, minced garlic
1 cup grated, Parmesan cheese

Directions:
Place milk, cream cheese, flour, and salt in a blender and blend until smooth. (I used my magic bullet and it fit, just barely, so use a blender if you aren't in the process of moving like we are). In a non-stick sauce pan, melt butter on med-high heat and add garlic. Let the garlic sauté for about 30 seconds, you don’t want to burn it but you don’t want it raw either.

Add milk mixture to the pan. Stir constantly for about 3 or 4 minutes or until it just comes to a simmer. Keep stirring and let it cook for a few minutes more. It should be much thicker now, Bubbling is ok, but don't bring it to a boil.

When it’s nice and thickened remove the pan from the heat. Add the cheese, stir it up and then cover immediately. Let stand for at least 10 minutes before using. It will continue to thicken upon standing. Also, if you have leftovers in the fridge, the sauce will thicken almost into a solid. Just re-heat and add a little milk and it will be back to normal again.

Sunshines and Creeps

Happy Friday! I am sooo looking forward to this weekend this week. I would like to wrap up this crappy week and hopefully we will get good news today that there is an offer on our house.

  • Sunshine to the fun thunderstorm last night.
  • Creep to the hot weather, unless I get to be in the pool when it is hot I do not really welcome 90 degree weather. I'm not much of a lakes person either. Perhaps if we had our own cabin it would be more appealing but when you're at someone else's place you're always on edge and I don't find it overly relaxing. I will take the good old city pool any day over dirty lake water. Also upper 70s does me just fine any non-pool day.
  • Creep to breaking my iPad, nuff said.
  • Creep to wanting to use my kindle and it was dead. poor planning as usual.
  • Sunshine to ArtFest in the Grand Cities this weekend. I love looking at all the fun arts and crafts.
  • Creep to getting a sunburn last weekend. I am usually so careful these days. Another disappointing move I made this week.
